HACCP
Hazard analysis and critical control points (HACCP)
What is HACCP?
Hazard analysis critical control point (HACCP) is an internationally recognized system aimed at food safety management.
A HACCP system requires that potential hazards are identified and controlled at specific points in the process. This includes biological, chemical or physical hazards. Any company in the food chain whether involved in the manufacturing, processing or handling of food products can use HACCP to manage these hazards.
The 7 principles
- hazard analysis
- identify the critical points
- establish critical limits
- establish monitoring procedures
- establish corrective actions
- establish record keeping
- establish verification procedures
The benefits of HACCP certification
Although the main goal of HACCP is food protection, there are other benefits acquired through HACCP implementation and certification, such as:
- enhanced customer and consumer confidence
- reduced costs through the reduction of product losses and rework
- reduced risks of recalls and product withdrawals, thus reducing costs associated with insurance and business liability protection
- simplified inspections primarily because of record keeping and documentation
- enhanced consistency in the quality of the product
- legal compliance
